Bloody Mary Tomato Air

Deconstructed Bloody Mary with tomato air foam floating on clear tomato water - flavor essence captured.
Ingredients
- 2 oz Vodka
- 4 oz Clear tomato water (strain tomato juice through cheesecloth overnight)
- ½ oz Fresh lemon juice
- 3 dashes Hot sauce
- 2 dashes Worcestershire sauce
- For tomato air 1 cup tomato juice, 2g soy lecithin
Instructions
- 1. PREP TOMATO WATER (24 hours ahead): Strain tomato juice through cheesecloth to get crystal-clear water
- 2. PREP TOMATO AIR: Blend tomato juice with soy lecithin
- 3. Use immersion blender to create ultra-light foam on surface, skim off
- 4. TO SERVE: Add vodka, tomato water, lemon juice, hot sauce, Worcestershire to glass
- 5. Stir gently with ice
- 6. Strain into tall glass
- 7. Spoon tomato air foam on top in billowing cloud
- 8. Garnish with celery stick and spices
