Gin & Tonic Caviar Spheres
Clean, Citrus, Innovative
Crystal-clear gin spheres (molecular caviar) floating in tonic water creating bursting pearls - modern alchemy.
Ingredients
- 2 oz Gin
- 4 oz Premium tonic water
- 2 tbsp Spherified gin pearls (prepare ahead)
- For spheres 1 cup gin, 2g sodium alginate, 5g calcium chloride in 2 cups water
Instructions
- 1. PREP SPHERES (2 hours ahead): Mix sodium alginate into gin, let rest 1 hour to remove bubbles
- 2. Dissolve calcium chloride in water in separate bowl
- 3. Use dropper to drop gin mixture into calcium bath, let sit 3 minutes
- 4. Rinse spheres gently in water, store in plain gin
- 5. TO SERVE: Add tonic water to balloon glass
- 6. Gently spoon gin caviar spheres into tonic
- 7. Watch spheres float and shimmer
- 8. Garnish with lime wheel and juniper berries
