Margarita Citrus Pearls
Tart, Bold, Innovative
Margarita garnished with bursting lime caviar pearls - tiny flavor bombs on the rim.
Ingredients
- 2 oz Tequila blanco
- 1 oz Orange liqueur (Cointreau)
- 1 oz Fresh lime juice
- ½ oz Agave nectar
- 2 tbsp Spherified lime caviar pearls (prepare ahead)
- For pearls Lime juice, sodium alginate, calcium chloride bath
Instructions
- 1. PREP LIME CAVIAR (2 hours ahead): Mix sodium alginate into lime juice
- 2. Use caviar maker dropper to create tiny pearls in calcium chloride bath
- 3. Rinse and store in lime juice
- 4. TO SERVE: Rim margarita glass with lime and salt
- 5. Add tequila, orange liqueur, lime juice, agave, and ice to shaker
- 6. Shake vigorously for 15 seconds
- 7. Strain into prepared glass over fresh ice
- 8. Spoon lime caviar pearls on top - they burst with each sip
- 9. Garnish with edible flowers
