Margarita Citrus Pearls

Margarita garnished with bursting lime caviar pearls - tiny flavor bombs on the rim.

Ingredients

  • 2 oz Tequila blanco
  • 1 oz Orange liqueur (Cointreau)
  • 1 oz Fresh lime juice
  • ½ oz Agave nectar
  • 2 tbsp Spherified lime caviar pearls (prepare ahead)
  • For pearls Lime juice, sodium alginate, calcium chloride bath

Instructions

  1. 1. PREP LIME CAVIAR (2 hours ahead): Mix sodium alginate into lime juice
  2. 2. Use caviar maker dropper to create tiny pearls in calcium chloride bath
  3. 3. Rinse and store in lime juice
  4. 4. TO SERVE: Rim margarita glass with lime and salt
  5. 5. Add tequila, orange liqueur, lime juice, agave, and ice to shaker
  6. 6. Shake vigorously for 15 seconds
  7. 7. Strain into prepared glass over fresh ice
  8. 8. Spoon lime caviar pearls on top - they burst with each sip
  9. 9. Garnish with edible flowers
