Molecular Mojito Air

Fresh, Minty, Ethereal

Mojito topped with ultra-light mint foam air (espuma) - weightless green cloud on cocktail.

Ingredients

  • 2 oz White rum
  • 1 oz Fresh lime juice
  • ¾ oz Simple syrup
  • 3 oz Soda water
  • 10 leaves Fresh mint (plus more for air)
  • For mint air 1 cup mint tea, ½ cup simple syrup, 2g soy lecithin

Instructions

  1. 1. PREP MINT AIR: Blend strong mint tea, simple syrup, and soy lecithin
  2. 2. Pour into shallow pan, use immersion blender to create ultra-light foam on surface
  3. 3. Skim foam off top and reserve
  4. 4. TO SERVE: Muddle mint leaves with simple syrup in collins glass
  5. 5. Add rum and lime juice
  6. 6. Fill with ice and top with soda water
  7. 7. Gently spoon mint air foam on top in billowing cloud
  8. 8. Garnish with mint sprig
