Molecular Mojito Air
Fresh, Minty, Ethereal
Mojito topped with ultra-light mint foam air (espuma) - weightless green cloud on cocktail.
Ingredients
- 2 oz White rum
- 1 oz Fresh lime juice
- ¾ oz Simple syrup
- 3 oz Soda water
- 10 leaves Fresh mint (plus more for air)
- For mint air 1 cup mint tea, ½ cup simple syrup, 2g soy lecithin
Instructions
- 1. PREP MINT AIR: Blend strong mint tea, simple syrup, and soy lecithin
- 2. Pour into shallow pan, use immersion blender to create ultra-light foam on surface
- 3. Skim foam off top and reserve
- 4. TO SERVE: Muddle mint leaves with simple syrup in collins glass
- 5. Add rum and lime juice
- 6. Fill with ice and top with soda water
- 7. Gently spoon mint air foam on top in billowing cloud
- 8. Garnish with mint sprig
