Sage & Honey Sour

Golden bourbon sour with charred sage and raw honeycomb garnish - artisanal bee-to-bar sweetness.
Ingredients
- 2 oz Bourbon
- ¾ oz Fresh lemon juice
- ¾ oz Honey syrup (1:1 honey to water)
- 1 Egg white (optional for foam)
- 3-4 leaves Fresh sage (plus sprig for charring)
- 1 piece Raw honeycomb
Instructions
- 1. Add sage leaves to shaker and muddle gently
- 2. Add bourbon, lemon juice, honey syrup, egg white, and ice
- 3. Dry shake first (no ice) for 10 seconds if using egg white
- 4. Add ice and shake vigorously for 20 seconds
- 5. Double strain into rocks glass over large ice cube
- 6. Light sage sprig on fire, let burn 3 seconds, blow out
- 7. Place charred smoking sage on glass rim
- 8. Garnish with piece of raw honeycomb
